How to configure the Product Rate settings to offer guests two options during checkout; Pay Now or Pay Later.
While editing a Product, go to Rates -> Overview -> Payment Options-> and choose the configuration shown in the screenshot below.

To customise what wording is used when you’re offering these options go to Experiences -> Settings -> Business and Finance -> Payment Text
Block Full amount / Pay Later - update this text if you want to let Guests block the full amount so that you can charge their card; and
Block deposit amount / Later - update this text if you're going to let Guests block a nominal or deposit amount (e.g. $1)
